Market Day Pumpkin Cheesecake
Notes:
This recipe was graciously sent to CopyKat by Misty, adapted by one from Kraft Foods, called New York Pumpkin Cheesecake. She also had a wonderful tip. If you don't have a spring form pan, pour into the cake pan, 8 or 9 inch round will do, just fill it half way
Ingredients:
1 C. graham cracker crust
1 Tbsp. sugar
1/4 C. chopped pecans (walnuts work real good too)
2 Tbsp. butter
5 pkg. (8 oz) Cream cheese, softened
3 Tbsp. flour
1 C. sugar
1 Tbsp. vanilla
1 C. canned pumpkin (I prefer 1 small can, Not the large size)
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp cloves
3 eggs
1/2 C. sour cream
(additional walnuts for garnishing the top)
Preparation:
Mix crumbs, 3 Tbsp. sugar, pecans (walnuts) and butter; press onto bottom of 9 inch spring form pan. Bake at 350 degrees for 10 minutes.
Beat cream cheese, 1 cup sugar, flour and vanilla with electric mixer on medium speed until well blended. Blend in pumpkin and spices. Add eggs, 1 at a time, mixing on low speed after each addition, just until blended. Blend in sour cream; pour over crust.
Bake at 350 degrees for 1 hour and 5 minutes to 1 hour and 10 minutes or until center is almost set. Run knife or metal spatula around rim of pan to loosen cake; cool before removing rim of pan. Refrigerate 4 hours or overnight.

Evening all!
What Is There To Be Thankful For?
The old man sat with his head in his hands
A frown adorning his face
A blind man stood just to his right
And quietly stared into space.
Another man was looking at him
As he sat down on his left.
The man concentrated on reading his lips
All his life he had been deaf.
The blind man turned to his elderly friend
And this to him did say,
"What things can you be thankful for
As we near Thanksgiving Day?"
"There's nothing I am thankful for,"
He said in a bitter voice.
"Im losing my touch; I'm getting old,
"And I don't have a choice."
The blind man touched him on his eye.
"With this you can see me.
"I'm so thankful that I can hear.
"It's with my ears I see."
The deaf man was thankful for his sight.
To him it was quite clear.
"I'm able to read your lips," he said.
"It's with my eyes I hear."
"You have the power to see and to hear.
"You're old, but yet you thrive.
"Quit smothering yourself with self pity
"Be thankful you're still alive."
From one to the other the old man looked
Then dejectedly hung his head.
"Yes, many blessings I have to count.
"On those I should dwell instead."

I made a pumpkin cheesecake a few years ago for Thanksgiving. It was so good. It was a nice change. This recipe looks different than mine. Mine doesn't call for sour cream, so this one looks like a keeper. I'll have to let you know how it turns out.
I'm going to order a spring pan from Pampered Chef. I don't live close to our mothers any more, where I could just borrow it.
