I always found it weird that eggs were so cheap. Now they’re not. I eat oatmeal for breakfast now, mostly.

There are two types of animals that the numbers recover quickly when things like this happen.

Chickens and Pigs.

Cattle? Forget it. It take years for the numbers to recover.

My hens are still laying well and I have an extra 10 dozen in the frig. Price of chicken food is insane though.

We cut off the 2.5% of our gas that came from Russia and the price goes up by a dollar a gallon. We lose 10% of hens and the price of eggs triples. What kind of new maths is this?

The poultry are being killed because if avian flu makes the jump to humans and becomes human to human transmissible, there’s a good chance it could be deadly.

I read about six human cases in China. Most of the people died, but the strain didn’t transmit easily between humans.

Modern egg farms are vast warehouses for chickens holding millions of birds. Very efficient and they cut the cost of production, however one of the problems is the lack of genetic diversity in those densely packed facilities. Just like children who are not exposed to the natural environment at a young age are sickly adults, generations of those birds have been virtually cloned in antiseptic facilities for the sole purpose of egg production. When a pathogen enters one of those facilities, the whole group is doomed.

Anecdotal side note, this year has been a pretty good year for songbirds and I don’t see thousands of wild birds dying off.

I have a retirement hobby farm and have a few thousand random varieties on dirt. My flock is exposed to the “bird flu” daily with the starlings and sparrows. I only fear the fedgov discovering an outbreak at a neighbors flock within 6 miles and then coming in and murdering my flock.

I get my eggs from local farm stands for $3-5 a dozen. Never buy supermarket eggs. As you state, the quality is amazing. I don't care about organic, but having the eggs fresh from the chickens makes all the difference. I don't mind paying a little extra and supporting the local farmers directly.

I was always suspicious about the very cheap prices of supermarket eggs.
