Try Southern Kitchen in Tacoma. They are SC transplants, I believe, and serve great fried chicken. BTW ours kid went to University of Puget Sound, so we visited them a few times. For us here in NC, it has to be Bojangles.

We always had Crisco on hand as well as Bisquick. Oh, and a used tin can full of bacon grease. My parents grew up during the depression.

I understand the nostalgia factor, but the mercury levels must’ve been through the roof. I love lake Huron whitefish myself, but keep it intermittent for that reason.

I like Popeyes, Publix, and Bojangles.

Most places Ive tried cook it until it is dry inside and cook it too hot so the crust is dark brown,not golden. It is also hard to find good fryers less than 3lb birds in the store to try at home. Those huge breasts are tough.
So as we speak, I am roasting a lemon garlic pepper chicken right now.

Royal Farms in MD and VA have the best “gas station chicken” I have ever come across. Try to grab some each time I travel through the area. I would take it over Popeye’s or Bojangle’s anytime.

I used to love Golden Bird Chicken in Los Angeles. They were a very successful local chain that had a unique recipe. There are still a few Golden Birds around. I liked the one on Vermont just south of Exposition, a few blocks from USC. They offered collard greens as a side dish, which I prefer to French fries. Unfortunately, that one is long gone.
