Don't like dealing with the guts on your deer? Lets face it: gutting a deer is probably the worst part of hunting. Maybe your harvest has fallen in a location you won't be able to drag it out. Or, you're over 400 yards away from your truck. A little know how of what to cut and avoiding the guts. How many of you out there use the gutless field dressing? If you're one of the newbies see the video to see how its done.

Heart, liver, kidneys, maybe the lungs...all good gut meat and essential in deep winter. Can’t break down protein without the fat. Not sure, but think that is where the term ‘go crazy eating rabbit’ came from. Not enough fat to properly metabolize the protein.
Cheers!

Like my dad always said “I just want to get my hands bloody”. Anyhow, we always carried good string or baling twine. Gut him out and then sew him shut if you have to drag him very far. Do it right and you get a clean animal back to the house.
If you know how to do it you surgerize when gutting leaving the heart and liver still attached inside. And you only open him up enough to get out the guts even if it means that bloody windpipe slaps you in the face when it suddenly pulls free.
Neither - A ragu with papardelle and Romano.
Accompanied by some fava beans and a nice Chianti of course!

One of these days, I’ll have to start researching what all is involved to try hunting here in Colorado.
Good post. Not all of us have a hunting mentor, but do want to get out and hunt anyway. No need to deal with the guts if you don’t need to deal with the guts; I just want the meat & hide.
Have done this many times, only when it is too far back to the truck. You do get less meat, neck an ribs. Hardest part for me is getting to the tenderloins as you have to go inside to get them out ... and they are by far the best part!

Longmire Season 5 is on Netflix now. Great show.
Stock up on bbq sauce to mask the rancid flavor.
Thanks. My wife and I watched it over the last couple of weeks. We liked it but the characters are beginning to do really stupid thing. Like Vic going out ALONE to find a gun in the river. Really stupid. Sending Ferg ALONE to deliver a mob boss. Really stupid.
I know, they have to make the show work but I lose sympathy when people do stupid things.
Agree on the really, really stupid scenes. Those two stood out with flashing lights and fireworks on the stupid chart.
I’ve never hunted in my life, but I watched that entire video and thought it was fascinating.
One of the things I learned was to always be aware of your location relative to the transport location before you pulled the trigger. Having relatives with horses was a big plus. And hanging up meat to tenderize for a while always makes for better chewing. We have boned out elk before and packed out the meat.
Cut up and packed out two last season. You got to go where the elk are. And elk live in some wild country so that may be quite aways from your transport. And one thing I have learned is not to pass up any ethical shot opportunity at elk ... you might not see another one for quite some time, if at all.
Leave it for the bears, and get away as quickly as possible.
“Guts” is far to general a term. By all means, avoid the intestines and stomach. But harvest the rest of the offal like heart, kidneys, lungs, etc. They make good eating too.
I'd say to braise it. You can't go wrong with low and slow. Especially on a tough cut.
