Monosodium glutamate, more commonly known as MSG, gets a bad rap.
People claim that it's a toxin that causes headaches and sweating, and that it leaves you feeling lethargic and flushed. The thing is, most research shows that that's not true at normal dietary levels.
Despite its umami flavor boosting power, rumors have given MSG a reputation so bad that many Chinese restaurants frequently put up "No-MSG" signs to assuage customer's fear. Some customers then put soy sauce on their food, adding the missing MSG in after the fact. Because it's delicious.
The folks at the American Chemical Society decided to bust some MSG myths in their latest Reactions video.
What Is MSG And What Does It Do?
MSG's flavor enhancing properties were first discovered in 1908 by Japanese chemist Kikunae Ikeda, who wanted to understand how seaweed, which had been used by chefs for centuries, enhanced the flavor of foods.
Ikeda found that the key was a common amino acid one of the building blocks for a protein called L-Glutamate.

Article is total BS. Just because something is “safe”, doesn’t mean it won’t sicken a large percentage of the population or even kill some of them.
Peanuts are “safe” but can instantly kill a child who is allergic.
A significant percentage of Caucasians are genetically unable to metabolize lactose.
Gluten will tremendously sicken those with Celiac disease and mildly sicken even more who are sensitive to the stuff.
Large numbers of people are sickened by sodium metabisulfite.
Really, the list of substances like these is very large.
And MSG is one of them.
Personally, larger amounts of MSG, any amount of aspartame, or any amount of Stevia will instantly give me a vicious headache.
I have thought about using Stevia in my coffee so I could cut back on the sugar. Maybe I’ll re think it. What kind of reaction did you have?
Just no need for it. Food bad enough to need MSG is too bad to eat.
Same here. It took me a while to find the culprit.
I got talked into nutrisystem. It works for some, permanently, dunno.
Got a month’s supply, read through the directions and found that in addition, I was to purchase a lot of stuff, and all of which was on another diet, which I stuck with and lost a bunch of weight.
I remembered MSG, and looked through the Nutrisystem.
It was just boxes of MSG with some dried unrecognizable stuff to reconstitute.
Sent it back very quickly
Italian restaurants I have to stick with marinara, pizza, that’s about it.
Had veal something and fainted the next day from the explosive headache and the blood pressure effects, I guess.
Happened again, when I forgot again.
I never touch capers. I think that was the culprit.

Both myself and Mrs.Catnipman get vicious headaches within 5 minutes of consuming the stuff, whether it be the “natural” kind or the super-refined kind or any kind in between. Headaches last a couple of hours.
BTW, Ditter, not everyone gets a headache from the stuff, but it’s way more common than the purveyors of Stevia products want people to believe. Here’s a google search:
Still, I don’t see why you couldn’t try it and see what happens. Just pay very close attention until you’re sure it’s not causing any problems.
We just use sugar. Theories state that the body responds to fake sugar in the same way.
I mean we could look at the obesity, compare it to what life was like prior to government and third party insurance, when people took care of themselves and moms watched the eating and surmise that these products are not helping anyone.
WE use up a bag of white sugar in about two years.
But you don’t know how much MSG is in the food you eat. You base it on whether you have a reaction. If you have a reaction, you believe MSG is the cause.

I will pass on the Stevia, I have had enough headaches in my life.
You didn’t eat the MSG but what was your diet? I need to lose a few pounds and I am not doing it.
Allergist will have a patient keep a food diary. If you have the same reaction after eating the same thing and it happens over and over, you know you are having an allergic reaction and it is relatively easy to figure out what is causing it.
Some reactions happen within 20 minutes but others don’t happen until the food is digested. It took me a while to figure out that the migraine type headache that I woke up with at 4am, was caused by the chocolate that I had eaten for dessert. I loved chocolate and I didn’t want to believe it.
I haven’t eaten chocolate in years.
I worked at a Mexican Restaurant and they used MSG as their fajita seasoning. Nothing else, just MSG.
I followed the eat right for your blood type. I don’t think every diet is right for everyone
But that could be part of it.
