That’s easy, the stuff they intend to sell at 7, 10 and 12 isn’t the stuff they didn’t sell at 2, 3 and 5. They set the barrels aside for the various times they intend to open them. There’s a lot of long term planning and self control in the whiskey business, clearly not something I’m cut out for.

Hmmm, you need to find a better class of aficionados to be associated with.
About 20 years ago, somebody was trying to sell a 6-pack of Billy Beer for $1200. Beer collectors came out of the woodwork to put 6-packs up for sale at something like $6 to help more reflect it's real value.
I take it nobody is stepping up to help lower the price?
