Let’s stick with the changes of name.
It’s a custom that stems from the middle east to retain the name of the father, no matter how many times a woman marries, even after a number of divorces, she returns to the name of her father, which I think is the result of TRIBALISM - the name of the father denotes their ORIGIN.
It’s not just in islam, the Maronites from Lebanon do the same.
And yes, you can keep your ‘infidel’ name when you convert to islam, if the imam permits it. But if that name is in any way seen to be CHRISTIAN you won’t be able to keep it.
And if you haven’t converted by the time your ardent muslim boyfriend drags you off in front of the imam to marry you according to their custom, you are automatically made a muslim and given a muslim name as part of your stupidity to regret later, when/if he treats you like an animal.
