Nutritional disparities between Americas rich and poor are growing, despite efforts to provide higher-quality food to people who most need it. So says a large study just released from the Harvard School of Public Health that examined eating habits of 29,124 Americans over the past decade. Diet quality has improved among people of high socioeconomic status but deteriorated among those at the other end of the spectrum. The gap between the two groups doubled between 2000 and 2010. That will be costly for everyone.
The primary conclusion of the study is interesting, though, in that its focus is diet quality among the population as a whole. Without accounting for socioeconomic status, there has been, the study reads, steady improvement. People arent eating more vegetables, or less red or processed meat, and their salt intake increasedwhich the researchers call disconcertingbut Americans are eating more good things like whole fruit, whole grains, nuts, legumes, and polyunsaturated fats.
Frank Hu, a professor of nutrition and epidemiology at Harvard and one of the studys authors, led with the good news when we spoke by phone.

FYI, I read some articles recently that frozen foods are about as good as fresh, and the nutritional quality of canned food is not bad.
Color, texture and flavor don’t compare to fresh, but they are OK for nourishment.
As for no flavor, I guess that’s why God gave us butter and bacon ;)
No, they won’t eat better. They eat and prepare what their families always have prepared. They eat what others in their particular cultures eat.
You are not going to get blacks to eat granola bars and tofu. That ain’t soul food.
And I really don’t blame them.
Thing is, even to eat poor, the food prices are skyrocketing.

I put them out on the sidewalks and leave them out while the Sun is shining then roll them back in our warehouse (which is in the same building) at night.
I'll tell my lady friend. She's a whole lot darker than I am, and eats both granola snack bars and tofu.
And she makes a jerked lamb that is out of this world.
But you keep up those stereotypes.

I am ever mindful with the grandkids that I am making the memories they will carry for the rest of their lives, possibly into the next century. It makes one humble.

I missed on teaching my daughter, because I left for work before she got up and got home after she got to bed when she was a little girl.
I'm trying to make up for that, but honestly? I'm having better luck teaching her hubby. My daughter, love her to death, she ain't a cook and really don't want to be.

Recently while checking out at Harris Teeter we got a coupon for 1.50 off of a 5.00 fresh produce purchase the next time we shop. We were just stocking up on some basic stuff, flour and the like, on this trip and as it’s summer our produce comes from farmer’s markets and garden, not the store. We assumed the coupon was based on the lack of produce in our purchases at that shopping trip and wondered if busybody Michelle O was behind it. we had never gotten it before this.
Then she is a rare person. The majority of black people hate that crap.
I never went to culinary school but I’m kind of a food geek.
If you have the gumption and can follow simple instructions you can make just about anything.
There are some things I’m just not good at though. Never benn able to make decent fried chicken, can’t make a cake from scratch to save my life except for one recipe. Same thing on bread. Still trying though.
I’ll figure it out someday.
My kids are getting interested in cooking. My son gets pretty creative and he’s adent cook for a 17 y/o boy.
