There was almost never white bread or rice on the table when I was a kid-we lived in the country, so whole grain was easy to find. I still don’t eat processed flour or rice-or any other processed food-I still live in BFE and there is a small mill not too far away that sells whole grain flour-and brown rice is available everywhere.
That said, I doubt bagels would do you in unless you ate enough of them to be morbidly obese...
I worked one night (for free) in a bagel shop in NJ when the owner dropped dead. Got out of there about 4:30 a.m. after everything was done and bagged for delivery. Interesting, but not what I want to do every day.

There is evidence , thought not much, yet, that there is something very wrong with American white ENRICHED flour. I can’t digest it, or commercially made bread. I get dizzy and sick and migraine within minutes.
But I can eat home baked goods and bread if they are made from organic unenriched wheat. It’s not the gluten I can’t digest. I can digest the plain rye crackers that have as their ingredients rye, salt, water. It’s the enrichment, probably especially the iron.
