We recently started salt curing pork bellies and beef briskets. The resulting bacon and pastrami are heavenly. It isn’t difficult.

Very tempting. I have his book Charcuterie but I've been dragging my feet diving in. Thought it would be difficult and that I'd ruin lots of expensive cuts before I got it right. But this video makes it sound like a piece of cake.

Which spices do you use for your Pastrami? Most recipes call for picking spice
which basically makes it Corned Beef. I've been looking for something a bit less
powerful for my second attempt.
