Who's faster on the draw? Gun or knife? This segment highlights a person with a gun against another with a knife, both are holstered. At the sound of the signal, each draws to hit their target. (balloons).
The person with the gun targets vary from 5-7 yards out and the knife guy balloons is only 4 feet away. This demonstration shows the gun prowess from varying distances and the time it takes to hit the target, which is more impressive than watching the guy draw his knife. You only get one “shot” with the knife. And in most real world situations your target will be moving.
So much depends on each person skills level that demonstrations like this. Really have no bearing what happens in real life.

If you throw a knife at your attacker, there is a really good chance that you are now being attacked by a guy armed with a knife.
I'm thinking you might want to stick with a handgun for self-defense.

Take a step forward and stab it. That way you still have your knife.
The acceleration and final velocity of a bullet makes whomever “draws” faster irrelevant.

I’ve seen martial arts demonstrations “showing” that it’s possible to slap a gun out of the hand of a mugger before the mugger can pull the trigger.
But you better know what you’re doing, you better be able to actually knock the gun out of the mugger’s hand and send it some distance away AND be prepared to either take down the mugger physically or get away from the situation before he can retrieve the gun.
First thing I thought of.
I my youth my friends and I spent hours and hours throwing knifes.
What we found that it takes huge amount of practice to get half ways bad. That it is a good way to lose your knife.
the same amount of firearms training well produce a better then avg pistol shot.
