How do you know which books are included in the Bible?

The OT was already in place during the 1st century and did not include the Apocrypha.

The bulk of Paul's writings were agreed to as Scripture in the 1st century. The remaining books were in place before the middle 1st century.

Rome only finalized their canon at Trent in the 1500s.

However, the issue is that of inspiration. The books of the NT are agreed to by everyone. The bulk of the OT is agreed to by most.

Not one of the ECFs Rome like to cite is considered inspired.

Maybe this will help, at least regarding the OT.
