There used to be altar boy who accompanied the priest while dispensing Communion. The altar boy would hold a small platter under the recipient's chin to catch any crumbs that might drop.Of course, that tradition has long since disappeared.
Smacking her with the platter would have been much more appropriate than biting her.

They are the only Catholic churches that are packed to the gills on Sundays.

that tradition has long since disappeared. Not entirely, but it is far less common than it once was. In my day, it was a point of pride among altar boys to catch any host or fragment that might be dropped. The thing is called a "paten", which is essentially Latin for a "small plate".

Not long ago we had several kids attempt to walk away without consuming. They were swiftly intercepted by members of the parish, and told by very big Italian men to put it in their mouths and swallow. Really surprised because they were there attending from a Catholic High School.
