I thought I’d read someplace that medieval churches and such were sometimes linked by tunnels. I imagine if you sought sanctuary in one you could escape via the tunnels.

Yep, my first thought was escape, too. If you have the means and a practical way to do devise an underground escape capability, then why not?

Tunnels have been found connecting Monasteries and Convents, too.
