but it sounds as if you are making the argument that the church can teach whatever it wants - including any major doctrine, despite not having Biblical support - because they created that whole Bible-thingy anyway.
I will let you adjust that statement to best reflect your belief. That’s what I’m hearing you say.
Now, the second half of your statement that needs to be addressed is the view you expressed about the Holy Scriptures.
It sounds as if you do not understand what the Bible says about itself, nor the fact that God acted to inspire men to complete 2/3 of the Scriptures before Christ came to earth. Nor God’s role in inspiration, transmission and preservation.
Think about these things and when you have answers, I would be open to discussing them.

In my LONG and illustrious Air Force career, 😆 I was in Germany, where part of our job, was to train NATO, host nation Air Force pilots in the construction of instrument flight procedures. Once, we had 3 Greek Air Force pilots come for training. I thought, here is my chance. I showed them numerous Greek words and phrases, and asked them if the English translation was good. They said yes, the translations were good. I can't remember any of them, except where Jesus said it is finished (John 19:30) They said, whatever job He had been assigned to do, he accomplished it. Very enlightening.

Awesome story and they were right. And the way the Greek is set up it indicates Jesus is the One Who has finished His “job” without any help from anyone else....and that the sacrifice He made on the cross for the forgiveness of our sins continues to this very day.
