Keep in mind, this story was not written down till decades later, by a someone who had faithfully lived the eucharistic life of the early church. He is teaching through this episode what the eucharistic liturgy is really about.

Of all the Gospel readings on the resurection of Jesus, this is my favorite because it deals with those who neither apostles, Mary, or the women, but everyday people who were struggling to deal with what had happen the 3 prior days. Also this would be as Salvation pointed out, the early form of the liturgy of the word just as the last supper was the early form of the liturgy of the euchurest.
