Ancient Jerusalem was absolutely built on seven hills.

Your other assertions are largely wrong as well.

Ancient Jerusalem was built on ONE hill. Ir David sat on one hill only. In Hezekiah’s time it expanded to TWO hills. Not until the modern era did Jerusalem move beyond those TWO hills.
