Roman Catholics conveniently forget about the Council of Orange and skip right over 1,000 years of theological understanding of God's predestination until they arrive at the Council of Trent
You left out one essential detail: the Council of Orange was a local Council and therefore not binidng on the whole Church nor able to proclaim dogma. And the Councils of Hippo and Carthage were.........local Councils. The "approved" Catholic Bible Canon was set at the Council of Trent. Agreed?

Local Councils are binding to local Churches.The Council of Carthage was binding to the Western (Latin) Church because it was accepted by the Bishop of Rome (Patriarch of the West). Thus the canon was set in the West by the 5th century. The Council of Trent merely reiterated the canon of the Council of Carthage centuries later.
