Last year my son was hospitalized for over a month....many tests and exams later it was discovered he had Celiac disease...his weight loss and health went down rapidly. When he changed his diet accordingly his health not only returned but has looked better an felt better than any other time in his life. However I would imagine they have already checked for this with Metmom.

Earlier, yes, but that doesn't mean things are over when it comes to helping her.

Recently I read about these Vietnamese people who have autoimmune reactions to ALL GRAINS, not just wheat/rye/barley.

They have trouble with corn, oats, wildrice and japonica rice. The result is they can eat only indicum rice, and NO BAMBOO SHOOTS either.

They have a problem with potato. Apparently there are some little bits of chemicals from the peels that get into the starchy areas, and they are simply more sensitive to that than the rest of us who get away with peeling the potatoes.

So, what do they eat? Well, lots of indicum and tapioca. And fresh water fish.

You can make lots of different things out of those ingredients ~ rice noodles, rice paper, rice balls, rice-rice, fake bread, fake cakes, filler for use in making the gelatinous green stuff they eat a lot of (bandelon). Hey, I eat a lot of that. Vietnamese native pastries and sweets are my favorites because I can count on them not having even traces of wheat gluten, plus their bakery is right down the street.

Metmom is down to eating chicken and sheep meat. She had no problem eating ostrich. That right there points to a partially understood autoimmune reaction to various commonly eaten mammals. Thankfully I don't have that problem.

Another type of autoimmune reaction centers on beans ~ some people have difficulty with blackbeans and fava beans. Some people die from contact with those beans.

Yet others have difficulty with kidney beans.

You might think that would be easy to control ~ just don't eat kidney beans. Alas, there's a breed of white kidney beans that's been developed to produce huge quantities of alpha amylase. That's a digestive enzyme similar to beta amylase (found in your own saliva).

They take the beans, process them for the amylase, and then stick it into DOUGH CONDITIONER. The chemicals that some people react to with an autoimmune reaction are found in trace amounts in DOUGH CONDITIONER or any other product those white kidney beans are added to!

I started working on a list of things where kidney beans, or their extracts, could be found and it was just too much ~ literally everything can have kidney bean stuff in it ~ even meat from animals fed kidney bean residual meal.

I'm sure Metmom has been tested for all of that and found to have an allegy to them.

So the question is how to avoid contact. Obviously you must eliminate all pastries and pastas! Then candybars. Then Japanese confections. Then Chinese confections. Then just about everything else.

The only compensation is you can shop a very large grocery store in about 5 minutes.
