“Not one jot or tittle of the law will pass until all be fulfilled.” St. Thomas has a good treatment in the Summa of what remained of the Old Law once the New Law was promulgated. Insofar as the Ceremonial Law was a prefigurement of the New Law of Grace, it ceased. Consequently, the Apostles, being fulfilled Jews, did not continue to practice the ceremonial precepts. There is a good discussion of it in the Acts. Animal sacrifice was a prefigurement of the Sacrifice of Jesus Christ on the cross. We continue to enjoy the merits of His passion, especially in the Eucharist.

It is easy to claim that the Church lies and makes stuff up, maybe you should supply some proof with your assertions?

Okay easy enough. Why did Paul call himself a Jew and not a Catholic if Christ started the Catholic Church?
