If you think you understand this "proof" text so well, why don't you see that in the beginning the word was "God"; that is, Elohim? It's right there in the beginning, the word elohim.
Genesis 1:1 In the beginning God created the heaven and the earth.
Bereshith bara elohim et hashamayim v'et haaretz.
There's the *literal* word "elohim".
