Well, the Orthodox would simply say "because He loves us more than we could ever love Him."

But, more importantly, how do we know He has mercy on us? When we pray, we simply ask for mercy. We don't know, but we hope and believe in His love.

We do know if we trust God to keep His word...

"God chose Moses..."
"Christ chose the Apostles."
"There were many chosen God's people who accomplished specific tasks..."
"The Jews were chosen..."
"And, as Christians, we are to serve ..."

Don't you see something different with what you have just stated? Christians are chosen of God just like every example you provided

Moses was no Christian. And not all Christians are chosen to do what some are chosen to do. And even the righteous are not easy to save (cf 1 Pet 4:13).
