I use WeatherMatrix.

Even though I am in the center of the country, I put Kitty Hawk, NC zipcode in the WeatherMatrix. So far, it is only showing some clouds/rain off the coast.

Looks like a radar map. There is no radar coverage more than about 200 miles off the coast.

That's the problem, your using weather matrix. How about the real thing... NHC or NWS?
