I've noticed a disturbing gravity high always in the vicinity of good bourbon.

Nah. It does look like the blue areas are more safe from earthquakes and volcanos though.

So the weight gain that my scale shows when I'm in Florida is not because I drink too many Pina Coladas while there, it's the extra strong gravity!

It's a low pass filtered complete bouger anomaly. It makes some sense if one associates red (highs) with dense, cold, descending lithospheric plate margins and associated vulcanism, and blue (lows) with hot, light, ascending thermal plumes of molten material, hot diverging lithospheric plate margins, and again the associated vulcanism. The filtering removes the relatively high frequency components that distinguish dense oceanic crust and relatively light continental crust to reveal deeper structure.

As one spacecraft lurches and drags through the Earth's uneven gravity field, the second follows 220 km behind, measuring changes in their separation to the nearest micron (a thousandth of a millimetre).

I wonder if they're correcting for any solar 'windage' or the ever-so-slight effects a change in 'medium density' (basically space with a sparse particle population) has on the velocity of radio-wave propagation and any resultant 'phase' (the means by which they've got to be measuring any distance differences between the two satellite) errors this might create ...
