Can you post your Menu so we can see what the food of the South is like

Supper tonight (Valentines) is stuffed filet mignon with twice baked stuffed potatoes, and warm spinach and scallop salad. This weekend, for the party, will be tamales, hand-made tortillas, refried beans, beef and chicken fajita, guacamole, spanish rice, salsa (some of the ingredients from the garden), beans and knuckles, and sopaipillas served with local honey. All home-made of course. I started cooking yesterday.

I see in your bio that you are Yurok. Smoked salmon will cause me to crawl over hot deserts and broken glass to get some.

However, in Florida, smoked mullet with ice-freaking-cold beer is just about heaven. Add smoked shrimp and you're there.
