Damn, I got distracted by the Guild's savaging of the Emmy Awards, and almost screwed up the grub!
From left to right you have medium-rare to medium-well tenderloin of beef, prime, not choice, not select, Prime corn fed beef...take all you can eat, but be sure to eat all you take.
At the end of the buffet is a zippy sour cream/horseradish sauce which you may leave or take - I love the stuff, and it sure does get the sinuses cleared out. Enjoy.
