You must remember that on average, the average Turk has only about 5% TurkiC genes. The ordinary Turk is, genetically descended from the Orthodox Greeks, the Armenians, Lydians, Romans, Galls as well as Syriacs, Iranians etc.
The majority of their ancestors 1000 years ago were Eastern Orthodox Christians and the rest were Armenian Orthodox or Syrian Orthodox.
The “going Turk” and going Mohammedan happened over centuries.
What we need is an incentive for them to reclaim their pre-Islamic identity. And to me this is counter-productive to “make them Greek”.
Turkishness is too intertwined with Islam for it to go away (which is why when a Bulgarian etc. became Muslim he was termed a Turk) - ever since the conversions in the 9th century of the Seljuk Turks.
What is needed is perhaps a Turkish Orthodox movement - something like the Gagauz or Chuvash.
So creating an autocephalous Eastern Orthodox church with liturgy in Turkish is the correct way forward in my opinion
