About a week ago, I was in Costco and saw those rotisserie chickens for $5. We changed our dinner plans that night. It fed me and my husband 3 times. First night was chicken with rice and gravy and broccoli. Two days later it was shredded chicken on a salad loaded with other yummy fixings. The third meal we used it in chicken quesadillas. That was a helluva deal. Next time I go to Costco, I’m going to do that again.

Mr. RightField and I used to do almost exactly the same ... but we would also pull off the skin and bake them until crispy (no carb crunchy snacks) and then put the remains into a crockpot, cover with water and cook for 48 hours on low. Have you seen the prices of purchased bone broth lately? Full disclosure: we preferred the Sam’s Club chickens. Either way, you can’t get much more out of $5 than those rotisserie chickens.
