It is very easy to rig a ranked choice election. Just have fewer candidates than the opposing party.

That’s not how it works. You need 50% + 1. In a recent RCV the third place finisher in the first round ended up winning.

It looks like the best way to game RCV is to have a bunch of people vote for the obvious loser and then their preferred candidate as second choice.
