There is not ONE AUTHENTIC MEXICAN DISHES.

There are a multitude of authentic dishes

Why?

Because there are various regions in Mexico and each has their specific use of herbs and methods of preparation.

This is true in China - there are different areas in China that have specialties Hunan Szechuan etc. Also in India, Japan etc

Even here in the United States no one can claim to have authentic barbecue. There’s barbecue from Texas, barbecue from Arizona, barbecue from the Carolinas

There is barbecue from many other places all a little different and they’re different normally because of the region they’re in

THIS IS SO GOOD! But start with good corn!!

Prepare the Street Corn

Street corn is also known as “elote.” You need five base ingredients to make it:
* Corn (on or off the cob)
* Mayonnaise
* Cotija cheese
* Lime
* Chili powder or hot sauce
Add flavor and texture with these extras:
* Sour cream
* Vegetable or canola oil
* Cilantro
* Garlic
Street corn is traditionally made on a grill, but you can also cook street corn in a cast-iron skillet on the stove or in the oven. The level of char depends on your preference.

Combine, Eat, Rejoice!

Here’s the fun part. You have two options for eating guacamole with street corn:
* Slather your guacamole mixture across the cob lengthwise and chow down.
* Carefully slice the grilled corn kernels off the cob into your guacamole mixture. Stir to combine and sprinkle extra cotija cheese on top. Garnish with fresh cilantro for extra presentation points. Enjoy the classic way with tortilla chips!

Guacamole & street corn

Step 1: Make the Guacamole
There’s really no wrong way to guacamole, but classic guacamole ingredients include:
* Avocados
* Salt
* Lime juice
From there, you can expand your flavor and texture palette with ingredients such as:
* Tomato
* Onion
* Garlic
* Cilantro
* Jalapeño
No pressure, but the ripeness of your avocado can make or break your guacamole. When choosing the perfect avocado, look for a dark color. Give it a light squeeze—ripe avocados will give a little without feeling mushy.
Carefully cut into your avocado longways, all the way around the pit. Twist the halves in opposite directions until loosened. Then, lightly tap your knife into the pit and twist sideways to remove it. Scoop out the flesh, place it into a bowl, then mix in your desired ingredients. Taste test and adjust as necessary.

Ingredients
* 1 1/2 ounces blanco tequila (also called plato or silver tequila)
* 1 ounce orange liqueur, such as triple sec, Cointreau, or Grand Marnier
* 1/2 ounce freshly squeezed lime juice
* Plenty of kosher or flake salt for glass, optional (do not use iodized salt)
* Ice cubes, optional
* Lime wedges for garnish, optional

Chopped /crisped Romane

IN BOWLS

-Grilled /charred sweet corn
-Avocado slices
-Colored peppers
-Red onions
-tomatoes
-Black olives sliced
-Black beans(drained)
(Veggies coarse chop)

Dressing idea - 2:1 Italian dressing : salsa

Or

Lime dressing:

Lime Dressing Ingredients:
* 1/3 cup extra virgin olive oil
* 1-3 mince garlic
* Honey
* Juice of 2 medium limes, about 1/3 cup
* 1/4 - 1/2 tsp tabasco sauce, or to taste
* 1/2 tsp sea salt
* Topped each serving with 2 Tablespoons of grated cojito cheese.
* 1/8 tsp black pepper, freshly ground
* Comment: Added a little honey to the dressing. Then finely julienned some fresh ginger, shallow fried the ginger until it was crisp and light brown. Tossed the salad. Drizzled the dressing over the top and then sprinkled the ginger over the top of the salad. Everything worked well together!
