Can someone explain, in adult words and concepts, how Mossad missed 7,000 rockets and thousands of men preparing and training for months to years?

It happens. How did the US in 1941 miss the Pearl Harbor attack: with a huge Japanese fleet with hundreds of aircraft, thousands of men, planned for almost a year. How did we miss it?
