The production of spike protein following vaccination is limited and confined primarily to the lymph nodes where the adaptive immune response takes place.
When you are infected, on the other hand, every infecting coronavirus particle is literally covered with spike protein. When a virus particle infects a cell, it uses the spike to gain access to the "machinery" of the cell. It forces the cell to make genomic RNA, mRNA and virus proteins. These become new virus particles covered with spike protein. After a couple of hundred or so new viruses are made, the cell dies and bursts open. Those new spike protein covered viruses go on to infect nearby cells and enter the blood to infect cells all over the body. This puts large quantities of spike protein throughout your body.
The difference in quantity of spike protein from vaccination versus the quantity during infection is like the difference between taking a sip of wine and drinking a liter of vodka.
If you are worried about the effects of spike protein on your body, then you should be avoiding infection by any means possible. Luckily, we have vaccines now. It's easy to get them.
