Do they speak Russian in Poland?

You do realize that the Russian majority in Crimea only dates to 1944 when the native Tartar population was deported by Stalin and replaced by Russians, don’t you? Crimea does not have a long standing Russian majority population.

I’m guessing anyone living in Europe speaks a minimum or 2 languages, most likely three.

They do speak Polish there, but I wouldn’t have any doubt they know Russian as well.
