I have SCUBA dived with many species of sharks (never Great Whites). It can be intimidating at times, but dont provoke them and they generally ignore you. Also, staying below them or at least below the surface so that your bubbles flow above and make you appear as a larger creature is a theory that, even if not true, has given me some confidence when they are around.
What you dont want to do is flop around on the surface like a seal meal.

The shark was just doing what they do when they’re hungry. As I studied this video closer in the beginning his back appears to have been bloodied. Could have been he was on his back when hit first. But you are right thrashing about will only make you look like prey. In this case it looked like the shark was thrashing him about and he was trying desperately to get away unsuccessfully. I don't think I could have remained still at all.
