It’s all in the prep. It’s such rich, dense meat, a little goes a long way. I like it parboiled (3x after fat removal), layered with bacon and sweet potatoes, then baked low and slow.
As for the crayfish, they eat garbage anyway (as do coons), so no reason to flinch at a cemetery.
