I haven't looked, but I am sure there are YouTube videos on how to kill and gut chickens, pigs and cows.
And on how to pluck chickens, scald and skin hogs, skin cows, etc.
And on how to butcher, cutting up all of the above.
Instead of trucking critters to slaughterhouses and food processors, truck them to cities and towns.
Require folks to watch the videos on how to do it, sell the critters to them directly and they have at it.
The freshest of meat, maybe cheaper.
City, suburban, and townsfolks get to learn more of where their food comes from.
A great homeschooling opportunity.
Families can split up a hog or cow.
Fowl are no problem, small enough.

Good Idea. Set up wet markets in the cities.
That’s a great idea. I’ll bet butchers can make some money doing that for folks that, for whatever reason, can’t or won’t do it for themselves.
I butchered some chickens a few years ago.
Remarked to myself at the time “I shall be eternally grateful I don’t have to do that for a living”.
I’m now considering ordering some meat chickens, in addition to my current flock of layers.
Probably not for long, as YouTube is checking with the W.H.O. to see if their policy guidelines allow Americans to know these things. /s
I have looked and they are there. I've watched a few of them just for fun (way before this pandemic ever started).
Here is one on how to butcher a cow. There are thousands more out there along the same lines.
I used YouTube all the time now to cook. Just over the weekend, I pan-fried top sirloin steaks and finished them in the oven with my cast iron pan. Very easy to follow instructions on the YouTube.
Now for those would-be home butchers, you might need to upgrade your knife set. The ones sitting in the butcher block on the counter top probably won't cut it!
Unless people are starving, that is not going to happen.
Most people are too squeamish these days to ever butcher an animal and eat it. Even a chicken
Plus, it is actually hard work. It takes physical strength.
