OK, so you set up an “ethical farm-to-table” restaurant in each community: how do you get people to frequent the place? are you going to allow competition? what happens when the place loses money? or the “ethical” restaurant begins to cheat on the menu in order to save money or make money? will “moonshiners” be tolerated (i.e., illegal “ethical” restaurants)? etc., etc.,
