Most Jewish people are Ashkenazi, which is European (Turkish actually). Yiddish is a Germanic language although based on Hebrew script. Besides, Jewish refers to a religion and not a race. There’s way too much focus on race these days, and for all the wrong reasons.
In addition, Christianity sprang up from within Judaism, with Jesus of course at the center of it, and historically Christianization in Europe and America has been carried on by white people. Hating the bible imputes a stink to Jews. Both Old Testament and New Testament state so. Why is anybody surprised.
But there are black Jews, as in Ethiopia. And God has, per promise, blessed all countries where the Jews and the rest of the people are on friendly terms.
In Europe, “race” means German, French, English. Over here, it refers to skin color.

You are mistaken. Jew refers to the nation or race (or tribe) of people. Judaism is the religion of the Jews. Just like the Cherokee or Comanche and many others, they have their own identity which includes tradition, language, territory and religion.
I am Ashkenazi. I’ve done all sorts of genetic test because I am a Cohenim.
Hate to break it to you but while I certainly have some Northern Europeans in the woodpile, my closest genetic relatives are Sephardi followed by Arabs in Israel.

I've read many narrative "scholarly" histories (e.g., Tom Holland) that posits judaism wasn't defined as a "religion" until it became necessary to differentiate it from early Jewish followers of Jesus (Jewish Christians) and non-Jewish followers of Jesus (gentile Christians). Up until then, jewish was a race of people, just like other races of people scattered throughout the known world.
“Most”? No Sephardim or Eastern Jews? I would not wager whether that “most” would stand demographic scrutiny or not. But it sounds way too confident, imho. Yiddish is, as all the Judaeo languages of the diaspora, based on a mix of Hebrew and German. The Talmud is written in Aramaic mixed with Hebrew. Ladino is Spanish mixed with Hebrew. The Five Books of Moses were translated into Judaeo-Arabic by the Saadiya Gaon back in the early middle ages, and, like Yiddish, written in Hebrew script with lots of Hebrew vocabulary.
Jewish refers to a nation with common bonds to the Land of Israel, the Hebrew Language, and, most important, the Jewish religion. While many converts to Judaism have added to our gene pool, in one instance the elites of the Khazar nation, there is plenty of identifiable Jewish DNA, which is nearly universal, though the Ethiopian Jews and the Bnei Menashe from India, I have heard, do not have the right strands. But the rabbinate in Israel had them convert when they made aliya. So Jewish is also a race, sort of, usually.
