Caleb Torres lost seven pounds his freshman year of college — and not because he didn’t like the food in the dining hall. A first-generation college student, barely covering tuition, Torres ran out of grocery money halfway through the year and began skipping meals as a result. He’d stretch a can of SpaghettiOs over an entire day. Or he’d scout George Washington University campus for events that promised free lunch or snacks. Torres told no one what he was going through, least of all his single mom. "She had enough things to worry about," he said... I got a job at the university library so could get textbooks from there. Also, worked registration (the days before online registration). Those who worked registration could register first. Gotta learn to play the game.

One time, the Dean came through registration to show it off to some big honchos. He decided to gripe at me for going in first. I told him I didn’t have time for him because I was due in the auditorium to help with the freshmen. He didn’t believe me. Of course, I was late so walked across stage right in the middle of his welcome speech. Of course, everyone clapped so I bowed, took my seat and said to him, “Told you so.” Oooh, his face, lol. Can’t believe I had the nerve.

I had some chinese friends in college. Very studious and didnt’t party. They just wanted their degrees and to get the heck out of there. The rice cooker was always going and the main side dishes were hard boiled eggs and sliced tomatoes with salt. They often ate standing up. I asked why and was told that’s how you do it in chinese schools.

I have actually done that a few times. Although more often, I used cream cheese.

Cry me a river! I lost all my dining hall money in a poker game the first night on campus. But I ate better during college than I ever could have in the dining hall. I got a part time job waiting and bussing tables in a restaurant for a while. When I got tired of eating Kansas city sirloin steak every meal I got a similar job at a Mexican restaurant where the German chef whipped up magnificent beef stroganoff and other delicacies in addition to his great Mexican fare. In between jobs I ate a lot of boxed macaroni and cheese cooked on a hotplate in my dorm room. That’s life, kid.

I spend less than $20/week on food. And that includes milk, OJ, and my French Vanilla coffee creamer.

Did you read the article you posted?

I think the bigger problem is that students don’t know how to cook. They don’t understand how to manage a budget.

Heck, I just found out the nights that we had macaroni and butter for dinner when I was a kid was because my parents didn’t have anything else in the house to eat.

One of my sisters told me that just recently.

I had no idea.

And we thought that was a great meal. We liked macaroni and butter.

I guess I was deprived and didn’t know it.

Hm...when I was in college and needed food, I got a job. Maybe they could do the same? Or are they too accustomed to getting free lunches at school?

My wife and I had pinto beans with sausage and corn bread for dinner on Sunday, and the leftovers tonight. Toss in an onion and diced jalepenos, and it’s good eats. I will be eating the rest for lunch tomorrow. We have more than enough money for our needs and extras. Don’t live an extravagant lifestyle, pay cash or be able to pay cash for everything other than a house, invest in a self-funded retirement plan, and financial problems won’t an issue when you get old.

In the early eighties, I was a hungry 22 year old Real Estate Associate living in the city of Detroit, and I survived on Grilled Cheese Sandwiches and Popcorn.
