In my neighborhood the Mexicans operate all of the restaurants, Chinese, American, Italian, you name it.

The Chinese place down the street from me is family owned and staffed, all Chinese. Their menu used to be fun to read. Mushrooms were referred to as “Fungus.” On their outdoor sign it brags “We delivery!” They have Red Sauce, Brown Sauce and Mambo Sauce.

But they’re good people and a couple of the daughters are cute.

My experience is that Chinese restaurants do NOT employ Mexicans; the staff usually seems to be 80%-100% Chinese. Those who are not, are usually white.
