Wife or butter? You chose wisely...

I lost my wife to cancer, if she could see the results of eating butter every day she'd change her tune.

We talked about this kind of thing a lot. I remember when the first advise (that I remember) came out about how bad eggs are for you. Her grandparents were farmers. They raised and grew all their food. Her grandfather at about a half dozen eggs every day. Every single day, and her grandmother at 2 or 3. He lived into his late seventies and she lived to be 96. I'll stick with my eggs.

I live way out in the boonies. When my heart seized up, I kept myself going by taking niacin and quinine water. Worked for me almost as quickly as nitroglycerin.

Also any books by Phinney and Volek. Also anything by Gary Taubes, such as Why We Get Fat. Another good website is dietdoctor.com based on the research of Dr. Andreas Eenfeldt. The whole point is to get off insulin production rollercoaster and burn fat (ketone bodies) for energy.

There are so many resources, a few hours of googling will result in more reading than you have time for. But basically, just don't eat any grains, any sugars, or any polyunsaturated oils. That's right, no bread! No pasta, cake, cookies, ice cream, sweets! Basically no processed foods. Eat meat, fish, low-starch vegetables (with lots of cheese and butter), nuts (not legumes), eggs, cheese, heavy cream, butter, coconut oil, avocado. 86 or 90% chocolate (it's delicious and good for you!) Plain full-fat yoghurt but nothing lite, low-fat, etc. Small amounts of berries such as blueberries and strawberries. Occasional starchy veggies like potato -- some can get away with it, some can't.

Use MyFitnessPal for a few months to track your nutrients, until you have a feel for it. Check what your "macros" should be (carbs, fat, protein) by using https://keto-calculator.ankerl.com/. Get the keto plugin for MyFitnessPal so you can add the proper columns to your food tracking. Keep your daily carbs between 20 and 50 grams. It can vary based on how insulin resistant you are or how obese, or whatever. Expect to feel sh###y for a few days to a few weeks as your body accepts that fact that you aren't sending down any more carbs, and converts over to burning fats. It's called keto flu. It goes away.

Get a Breville Milk Café Electric Frother and some decent milk. Love mine. And some vanilla flavoring, lo-cal artificially sweetened given the topic of this thread. Cost Plus World Market carries it in the larger bottles, it is expensive in the small bottles at Kroger.

When you eat too much protein, it is actually not healthy. Primarily, it hurts your kidneys and your body actually converts it to a glucose (sugar) which is then treated like a carb. Furthermore, your body feels satiated for LONG periods of time when on a high fat diet low carb diet. It does NOT on a high protein low carb diet.

Butter (from cows that are grass-fed) is good for you. Margarine (all chemicals) is bad. Vegetables need to be eaten with some kind of fat to unlock the vitamins in them.

I’m sorry for your loss. I use Kerry Gold butter too. I hope they can keep up with the demand as it becomes more popular. I wish I could convince my husband to throw out the skim milk (or 1%) that he drinks.

When you really learn how your liver metabolizes what you've consumed, you realize how all the common notions about food and nutrition are upside down.

Fat does not mean fat.
Fat, in the absence of glucose (metabolized carbs) is turned into ketone energy. Not fat.

Carbs => fat
Sugars and carbs are easily converted into blood glucose. Get much at all of it and insulin is required to keep the levels down (high glucose is actually toxic) and it's kept down by being metabolized by the liver into fat. A wonderful mechanism that not only saves you from sugar toxicity but also has the survival benefits of storing fat on you for the lean times when carbs aren't around.

Also, most people don't realize that the Liver can metabolize protein and even alcohol into energy.

I use pork rinds for breading. I crush them up and dip chicken filets into them before cooking. I use egg whites for the binder. The other thing I use pork rinds for is for my homemade pate. Saute onions and chicken liver, then add some low sodium chicken stock to deglaze the pan. I place the mixture in a food processor and add heavy cream until I get the consistency I want. Let it set for a couple of hours. After that it is dip those pork rinds in it and go to town.

Lost 30 pounds with these two recipes.

Congrats!! Did you follow a keto diet plan? What have you changed from losing to maintenance?

For the uninitiated, WHAT fat you eat matters almost more than how much. Stay far away from all seed oils as they are almost all rancid. Animal fats are excellent, so long as they are from healthy animals. Thus, grass fed animals or pastured animals. Organic animal fat much better than non organic. Don’t eat fat of feedlot animals very often.

Grass fed butter, like Kerrygold, is what you want. Grassfed animals will have vitamin K in their butter, which is a most important cancer fighting, skeleton strengthening vitamin we lack. (Also found in fatty seafoods)

Coconut oil is very good for the brain, the skin, etc.

Olive oil is also important but it needs to be from a company that doesn’t mix inferior seed oils into it, which for some sick reason is legal in the USA, (and illegal but done anyway in some of the European brands).

When the original article says human fat metabolism is complicated, they aren’t giving enough credit to the gut bacteria. We don’t metabolize or digest without them. In order to have the most optimal biome, we have to feeed them every time we eat. They don’t eat fat. So we need to give them the starches they crave. Drop the sugary stuff (which the bad ones crave, starve them to death) and focus on potatoes and rice, cooked and cooled, as well as every kind of vegetable. Not much fruit, but a little is ok.
