Jesus and our ancestors ate bread. Bread type food items are not the problem if they are whole grains natural ingredients. Our bodies need some nutrients from grains and people cutting them out completely will have problems at some point down the road.
The problem is the convince of highly processed/altered foods (of all categories) with longer shelf lives and people thinking they can eat what they want whenever they want and each person’s lifestyle/activities.
People need to find the right balance of macro nutrients (carb, fat, protein) for them self and get their micro nutrients (vitamins minerals, amino acids, enzymes etc etc) from various sources, not eating their “favorite” foods like pasta, ice cream, fried food, meats, candy, etc) every day or two for years. People are similar but not exactly the same so no method of eating will be right for everyone.
Never gave up eggs, never gave up butter, I love fried potatoes, baked potatoes, whipped potatoes, you get my drift.., rare steak, Mac and cheese, coffee...
I smoke cigarettes, about a pack a day.
The one thing I can do without is dessert. I'm not fond of sweets.

What specific nutrients are provided by carbs? What does one suffer from if they quit eating them? There are good vitamins in low glycemic index vegetables, but you are not going to die from a lack of potatoes.
Take a step back from your assumption. Plains Indians, Inuits, Mongols and Masai people’s lived very well wiith very few to no carbs.
I totally agree with you about the highly processed foods filling our grocery store shelves.
But the problem with modern grains is that they have been genetically modified to the point that they are nothing like the grain of Biblical times. The closest modern grain to that is “Einkorn wheat”. Modern grains are literally poison to our bodies. You can get any carbs your body needs from vegetables, nuts and seeds, and you can make bread from seeds and nuts that would be very much like the flat unleavened bread eaten in Biblical times. Only a few people with hypothyroidism have to be cautious of not going too low with their carbs.
There are quite a few examples of peoples such as Inuit and Eskimo who pretty much lived on meat, fatty fish and animal fat with only occasional eggs, plants, seaweed or berries. On this diet they literally developed no heart disease, diabetes, tooth decay or cancer. Only when they adopted grains and sugar from trading with whites did they begin to suffer from these diseases.
