Containers. Storage at home is in ziplock snap containers
As gifts put in tins or mailable light weight containers. Neighbors get plates etc
Macaroons and divinity must have immaculate utensils with a powerful stand mixer. Also low humidity day
Whip 2 egg whites
Dash of salt
1/2 teaspoon vanilla in high in stand mixer
At soft peaks add
2/3 C granulated sugar
When stif peaks form fold in
1 1/3 C coconut
Drop on parchment paper
Making 12-18 1” mounds ( all on one baking sheet
Bake about 20 minutes in slow oven. 325*
CARAMELS
( can’t find grandmas — but this has more butter and doesn’t use fresh cream)
Biggest difference is grandma you cook only to soft ball stage not hard ball Saves the teeth!
Stirring is very important. I have a wooden spoon that has been cut off at end — makes getting into the corners easier.
Melt 2 sticks (1c ) butter ( no substitute)
Stir in 1# or 2 1/4 C light brown sugar
stir in 1 Cup light corn syrup
1 (15 Oz) can sweetened condensed milk
Cook medium heat until it reaches (240 or so) soft ball stage
Remove from heat
. Stir in 1 teas vanilla
Pour into butter container ( I use retangular ziplock). Some people cut and wrap. I wait until it’s time to make up package and cut with a warm knife the size I want. I stays softer and doesn’t dry out !
