I don’t mean to hijack this thread and turn it into a cooking thread, but when I was looking at the recipe and the site that S&SF linked to, I saw Brussels sprouts. I get some people don’t like them - I happen to like them a lot, and, in fact just had some last night. My mom got me to eat them when I was little because she said they were fairy cabbages.

When I saw Brussels sprouts on the site, it reminded me of something I used to make, especially at Thanksgiving and Christmas and thought I’d share the recipe with you all. Even some (not all) people that aren’t fond of the Brussels sprouts seem to be OK with this. It’s good with ham, roast beef, prime rib or whatever and is colorful for the holidays.

Zesty Winter Vegetable Casserole
1-1/2 - 2 cups sliced carrots (about 4 medium size)
1-1/2 - 2 cups Brussels sprouts (about 1/2 lb)I’ve used fresh and frozen - either works
1/2 cups mayo
2 Tablespoons finely chopped onion
2 Tablespoons prepared horseradish
1/4 Teaspoon salt
Dash Pepper
1/2 cup fresh bread crumbs
1 Tablespoon margarine or butter, melted
1-2 Tablespoon chopped parsley, if desired

- Heat oven to 350
- In medium saucepan, cook carrots in boiling, salted water for 10 minutes. Add Brussels spouts and cook for 10 minutes more or until crisp-tender.
- Drain, reserving 1/4 cup cooking liquid.
- Place vegetables and reserved liquid in 1-1/2 quart baking dish or casserole [I usually use a Pyrex round bowl/casserole]. Toss lightly to combine
- In small bowl, combine mayo, onion, horseradish, salt and pepper. Spoon over vegetables and mix.
- Mix bread crumbs and melted butter, sprinkle over vegetables and sauce.
- Bake uncovered at 350 F for 20-25 minutes, or until thoroughly heated.
- If desired, garnish with parsley.

Makes about 10 1/2 cup servings. (approx. 130 calories/serving).

I’ve doubled the recipe and used a rectangular Pyrex casserole.
