At least nobody has claimed that he eats scrambled eggs the old fashioned NYC way.....with ketchup. YUCK !
Also, having worked in the restaurant business for a while, here's a dirty secret: Patrons ordering meats well done gives the restaurant an opportunity to use cuts of meat they otherwise were about to throw away. Overcooked meat tastes the same whether the meat was fresh or not.
We would always keep older meat aside for a while in the chance somebody would order it well done.
