I had another baked potato, plain and dry. Between cleaning closets, I’ve been stuffing for 20+ years, and Trump rallies, interviews, and news, I am not cooking real food, just sticking what’s handy in the oven.
Prepare that ham hock and bean soup that I linked to yesterday. It freezes well, and a good supply will last a goodly portion of the winter. It freezes well, and you can reheat it for the debates.

I made—well not sure what you would call it. I sauteed bacon, onion, mushrooms, and zucchini & folded the mixture into scrambled eggs and cheese and enclosed in a spinach wrap. It was fast and fairly tasty.
Oh and I love baked potatoes!!! They are my new pasta replacement ;)
