I am way ahead of you on Rush/Steyn today and on prime rib too....best I had was bone in at the immortal Durgin Park. I have total recall of the eating (yum!!)and who was at the table that day.

Bones do nothing for steak or prime rib. The flavor doesn’t cook out into the meat. Bones are good for roasting and stock/soup. Gravy is from meat fat drippings.

Gravy is from meat fat drippings.You can say all that but the meat (and cartilage) near the bone is always better tasting on prime rib and everything. This is caveman 101____!!! Then use the bone leftovers for soups after cleaning-rinsing off a bit. If its all family (eaters) then no big deal.
In poorer times no one would just toss the bones. Some of the best nutrition (collagen and trace minerals from the grass) is in them and people used to know this instinctively
