Even at the top end restaurants most of the back of the house is hispanic. They rule the industry now, and the food is no more likely to be bad than it was in the days before they took over.
I would differ on the no more likely to be bad. I’ve seen the quality of food drop drastically in most restaurants from the bottom to the top end establishments. A local station covers food inspections of local places on a weekly basis. Those reports also show a decline in quality control, sanitation, training for a lot of them, many don’t do well with the follow-up inspection either. Not a good sign.
Best breakfast I ever had was made by a black cook in Florida. At a believe it or not, Denny’s. Man that guy could cook.
