If it is such a disadvantage in America to be a minority, how come people like her and Elizabeth Warren go to such length, and even commit fraud to be counted as a minority? Huh?

It is impossible to say for sure but in her case it could have started from a genuinely positive mindset — a desire to improve services to minority communities and help those in need more generally which would be more complicated as an outsider. Something must have changed from the parents’ perspective, though, to give them cause to come forward now.
