This is only is you have a google account. If you choose to search on google WITHOUT an account, they still have your search history archived. It’s simply linked to your IP address.
How do we access or delete that info ???

The information isn’t really deleted.
It’s just that local/locally accessable copies are removed and it can no longer be pulled up on your computer/device.
The history is still retained on Google’s servers.

This process may only make you feel good. There is no reason to believe that Google deletes anything, ever. But if you want you can ask them to tell you that they have nothing.
Anonymity on the Internet is hard, and simple recipes like this one will not work. The least troublesome method that is still effective is to browse only in Private mode, and close the tabs as you switch sites. Watch the cookies. Install add-ons that mess with the signature of your browser. Have multiple browsers, multiple OSes (in separate VMs.) Rememember that your IP address is largely fixed, unless you are connecting from a large NAT.
